First I will show you how to colorize a black and white photo. Be sure and look at my section on selecting if you are not sure how to make precise selections.
      In all the instructions given here, set your selection feathering to the minimum before you start. Otherwise you will get a halo of old colors around your objects. If you end up with harsh edges because of not having feathering, use the Blur tool to smooth them out.
     If your image is in Grayscale mode, change it to RGB by choosing Image > Mode > RGB Color.
      I selected the apples one at a time. When I had them selected, I saved each as an Alpha channel. To do this, after you have made your selection, click the Save-Selection-As-A -Channel button in the Channels palette, or choose Select > Save Selection and click OK.
      If you used Quick Mask to make your selection outlines, be sure and click the Standard selection button (just to the left of the Quick Mask button in the toolbox) to convert the mask to a selection before atttempting to save it. Quick Masks can't be saved until they are converted to selections.

I gave each apple a different color by choosing Image > Adjust > Hue/Saturation while each was selected. You may prefer to use Layer > New > Adjustment Layer and choose Hue/Saturation from the dialog box that opens.
       If I had wanted to give them all the same color, I would have Shift-selected them one after the other until all were selected . You can also select them all at the same time by painting them all in with white in the Quick Mask state. Then, after you change the Quick Mask into a selection, apply Hue/Saturation to the whole bunch simultaneously.
